Play Time

I have more fun with Eliza every day! I absolutely love getting to know her sweet personality and playing with her. Here are a few images capturing our play time this afternoon. 


She's not crawling yet but is wiggling and reaching for toys in front of her. I don't think it will be long before she's moving!

A Springtime Snow

It's Spring and we just got 5 inches of snow! I think I've seen more snow in the last month than I've seen in my whole life. I'm hopeful this is our last snow and we can look forward to sunny and warm temperatures coming soon!

Eliza and I had a fun and relaxing Sunday just hanging out in the house. I know she's only 6 months old but I love that we can "play" with her now. She's so aware of everything around her and she especially loves to watch Winston run around the house!

All of that playing worked up an appetite for some snacks... waffle wheel puffs are a new favorite.

And so is the sippy cup.

At Eliza's doctor appointment on Friday we learned that our active little girl is a whopping 13 pounds 5 ounces. Putting her in the 6th percentile for weight. Her doctor said she looks great and is healthy, just little!

Me and my itty bitty are hoping that the spring weather we are used to is coming soon so we can play, stroll and swing outside!

Home

We are home! I have never been more excited to be home. It's been a long 3 months and it feels so good to get settled again.

All of our furniture and belongings were moved out during the repairs so it has been a lot of work to unpack and reorganize everything. It's a good thing I have such a cute little helper! :)

I did have another good helper around last weekend, my dad! He came out for a few days while Will spent part of his spring break Turkey hunting and visiting his family in Alabama. (I usually never turn down a trip to Birmingham but I am so ready to be in one place for more than 3 weeks that I stayed put!) It was so fun having my dad/ Eliza's Poppy out for a visit! Eliza and I put him to work while he was here. Thank you for all you did! We can't wait for you and Gigi to come back next month!

 Will is home now and we have a few projects to work on before school starts back. I am so thankful to be home and get back into a regular routine!

Tasty Tuesday

I'm going to try and setup some weekly post topics. A weekly recipe seems like a good place to start! Now that we are back in our house I'm excited to start cooking again and I want to try some new things! I so often pin great looking recipes on Pinterest but never get around to making them so most of the recipes will be from there.

Last night I made this Thai Crunch Chicken Salad.


Thai Crunch Chicken Salad
[sauce from thai chicken wings]
serves about 4
3 boneless, skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon pepper
dressing + marinade
1 cup sweet chili sauce
1/2 cup rice vinegar
1/2 cup lite canned coconut milk
6 tablespoons brown sugar
4 garlic cloves, pressed or finely minced
2 tablespoosn creamy peanut butter
2 teaspoon-sized knobs of ginger, grated
2 limes, juiced
1 tablespoon soy sauce
 
Preheat oven to 375 degrees F. Spray a baking dish with non-stick spray. Season chicken with salt and pepper, then place in the baking dish.
Combine chili sauce, vinegar, coconut milk, sugar, garlic, ginger, peanut butter, soy sauce and lime juice in a saucepan, whisking to combine. Bring to a boil, the reduce to a simmer and cook for 3-4 minutes until slightly thickened. Remove from heat and pour half of the sauce over the chicken, turing chicken to coat completely. Set remaining sauce aside to dress the salad with.
Bake chicken for 25-30 minutes, or until it is cooked through.

1 small napa cabbage, chopped
1/2 small red cabbage, chopped
6 green onions, sliced
1 large cucumber, peeled, sliced and quartered
2/3 cup chopped or sliced carrots
2/3 cup edamame
2/3 cup torn fresh cilantro
2/3 cup chopped peanuts
While chicken is cooking, combine all salad ingredients, except for peanuts, in a large bowl and toss. When chicken has finished cooking, let cool for a few minutes then either shred or cut into chunks. Serve salad, top with chicken, top with peanuts, then top with dressing.

It was delicious! The salad dressing is so good and a little spicy! I paired it with these yummy pork dumplings from Trader Joes. I will definitely be making the salad and eating the dumplings again soon!

6 Months Old



How is it possible that you, my newborn baby, are already 6 months old? And how is it possible that I love you more and more each day! Being a mother to you is even better than I ever imagined. It is so much fun watching your little personality develop and having you interact with us and the world around you!

Mornings are still my favorite time of day with you. I know that's probably because I already love the mornings so much and now I get to spend every one of them with you! You give the best and sweetest smiles first thing in the morning and they make my day. You usually wake up for the day around 6:30 or 7. You give me sweet snuggles, eat and then play in your exersaucer while mommy enjoys her other morning favorite...coffee. :) About 30-45 minutes after you wake up you are ready for your solid food breakfast. You are developing quite an appetite my dear! I feed you a fruit or two along some oatmeal. Now that we are FINALLY back in our house you are eating meals in your new high chair. You are doing great in it!

You have put yourself on a 4 hour schedule and I am really loving that! It seems that you and I both thrive on consistency and schedules. I love having more awake time with you and you are also taking two good naps (usually at least 2 hours). Just in the last few days you have started rolling from your back to tummy when I put you down to sleep. I know you are old enough to safely sleep on your tummy but i'm not used to it yet! I found myself going into your room last night to check on you before I went to sleep. Of course you were fine! Much to my surprise and excitement, you are starting to sleep through the night! Go girl! (Only 3 months later than I was expecting...thanks Baby Wise.)


Although you seem like such a big girl to me now you are still a tiny little thing! You are wearing mostly 0-3 month clothes and 6 month pajamas. Your 6 month check-up is on Friday so I'll find out your weight and height then. I'm guessing you weigh around 13 pounds.

You love bath time! You squeal and splash the whole time. It makes me excited to see you in a pool this summer!



We had one beautiful day last week-- sunny & 83 degrees! -- so I strolled you down to the park in our neighborhood to introduce you to the swing. You absolutely loved it! You kicked your little legs and smiled so big! We will go back as soon as the warm weather returns!


You are Winston's little buddy now. You light up every time he comes around! He is really good with you and tolerates you pulling on his ears and tail. :)



I can't believe we are half way to 1 year! I am cherishing every moment of baby Eliza because you are growing and changing so much! Your daddy and I love you so much sweet pea!
